Salary: £23,144 - £24,285 with progression to £26,396 per annum

We run multiple cafes and restaurants on the Newcastle University campus, a catered halls of residence and an event catering business to deliver catering for a variety of events and conferences.

The Role


37 hours, full time position.  Mostly week day and daytime shifts.  37 days holiday pa (inc 25 days annual leave, 4 University closure days and 8 public holidays).  We are looking for an enthusiastic, professional and friendly Head Chef to join our team.

We have an exciting opportunity for an experienced, skilled Head Chef to join our team. Line managed by our Development and Innovation Chef, you will work as part of a team of Head Chefs. 


You will continuously develop the food offer, ranging from large scale catering and fine dining to restaurant and cafeteria units, taking into account changing trends and customer expectations, with the flexibility to move between units on our Newcastle campus. 


We are particularly keen to hear from people who have demonstrable experience in a range of cooking techniques.  Working with other chefs, we encourage you to generate new ideas in relation to menus to constantly meet the changing needs of our diverse customers. 


As part of your role, you will not only be responsible for health and safety within your units and team.  You will also support our Chef teams and provide steer and direction. Championing local, sustainable and affordable menus. You will be responsible for online menu planning and ordering.  A wide range of training is available throughout the year.

Key Accountabilities

  • To work as part of a team of Head Chefs to continuously develop the food offer across EAT@NEWCASTLE, ranging from large scale catering and fine dining to restaurant and cafeteria units, taking into account changing trends and customer expectations
  • Be proactive in championing the use of local and seasonal produce and developing sustainability strategies to meet the Service’s objectives
  • To supervise and motivate the team of chefs and general assistants to ensure delivery of a high quality food and beverage service to University customers
  • To oversee the preparation and production of food (through traditional and/or cook chill methods) to ensure food safety in accordance with the Service’s Hazard and Critical Control Point (HACCP) Policy
  • To plan, cost and prepare menus with emphasis on providing healthy choices and making best use of seasonal, organic, Fairtrade and locally produced goods where possible and within agreed budget constraints
  • To be responsible for achieving agreed gross profit within your area of control
  • To order and oversee the safe use and storage of goods and equipment (food and beverages, chemicals etc.), as required, ensuring compliance with Service Standards, Food Hygiene Regulations and Health and Safety Legislation
  • To ensure the work environment, equipment and work practices fully comply with operating procedures, food hygiene regulations and health and safety legislation,  e.g. equipment is maintained in clean and full working order, reporting and addressing any irregularities
  • To support the Food & Beverage Manager in staff recruitment, selection, performance, development and administration e.g. short listing applicants for interview, assisting with interviews, undertaking Performance and Development Reviews (PDR) and timely submission of variance sheets
  • To contribute to the continual improvement of the catering service to all University customers by making recommendations and implementing changes in food production and service e.g. through evaluation of customer feedback, menu planning, and product sampling
  • Monitoring of catering equipment and fabric of food preparation areas, making recommendations for replacement/repair or reporting emergency maintenance needs so that a safe and fit for purpose catering environment is provided at all times
  • Deal with customer complaints, where able, directly from customers and those reported by staff
  • Support the Service’s commitment to training and development by participating fully in training courses designed to improve personal skill levels and knowledge. Plan, oversee and where appropriate, deliver training and development to staff e.g. PDR and Induction


Knowledge, Skills and Experience 

  • Up-to-date knowledge of Food Hygiene regulations e.g. HACCP and Health and Safety legislation 
  • Awareness of current trends and issues within the catering industry 
  • Menu engineering and costing 
  • Knowledge and understanding of cook chill operations (Desirable)
  • Knowledge of Employment Law and Human Resource management  (Desirable)
  • Experience of specialist software (Saffron, Kinetics, EPOS Systems) 
  • Supervisory and line management: able to work effectively as part of a team whilst undertaking a leadership role 
  • Computing skills including the ability to operate 
  • spreadsheets and word processing programmes proficiently 
  • Experience in menu planning 
  • Relevant supervisory experience in the hospitality or catering industry to motivate a team to achieve results 
  • Relevant supervisory experience in leading a team of chefs  (Desirable)
  • Significant experience working in a cook chill operation  (Desirable)
